This one is a good one for lunch at work, prepare it all the night before. Makes a change from salads……

Ingredients

•  2 chicken breasts

•  1 tube of tomato puree

•  1 red pepper, sliced

•  1 onion, sliced

•  8 walnuts, crushed

•  50g goats cheese

Method

1. Oven temperature of 180C

2. Butterfly cut the chicken and flatten it out

3. Thinly cover with tomato puree

4. Sprinkle peppers and onions over the top

5. Place on a baking try in the oven for 15-20mins

6. Remove and sprinkle with goats cheese and walnuts

7. Place back in the oven for 5mins then enjoy…..
