2 eggs
Freshly ground pepper
Coconut oil
Sliced Mixed peppers
Mushrooms
Mozerella
Lean diced Bacon
Preparation method
Whisk eggs in to a bowl,
Heat oil in a large, ovenproof, pan over medium heat.
Add peppers, mushrooms, lean bacon to pan, stirring constantly, until the bacon is cooked.
Pour the egg mixture over the ingredient, lifting the edges of the frittata to allow the uncooked egg to flow underneath, until the bottom is light golden, 2 to 3 minutes.
Dot the top of the frittata with mozzarella , and then transfer the pan to the grill until puffy and lightly golden on top, 2 to 3 minutes.
Let rest for about 3 minutes before serving.
Serve hot or cold
