Ingredients

  • 600g mixed dry fruit
  • 1tbs ground cinnamon
  • 1/4 tsp grated nutmeg
  • 1tsp vanilla extract
  • Zest and juice of an orange
  • 3 tbsp melted coconut oil
  • 3 eggs
  • 400g ground almonds
  • 200g chopped walnuts

Method

Line a 20cm cake tin with grease proof paper. Cut a circle for the base and strip around the side. Pre heat oven to 150c

Chop the fruit and mix in a large bowl with spices , vanilla extract, zest and juice of orange, melt coconut oil beaten eggs. Add almonds and nut mix together. Place the mixture in a tin. Bake for 1 1/2 hours or until skewer test comes out clean. Allow to cool before serving.
