Starter red lentil soup

Onion chopped

2 celery sticks, roughly chopped

1 carrot, peeled and roughly chopped

1 garlic clove, crushed

1 tsp ground cumin

½ tsp ground coriander

175g split red lentils

1.2 litres vegetable stock

400g can plum tomatoes

2 tsp tomato purée

1 bay leaf

Preparation method

Heat the oil in a saucepan. Add the onion and cook over a low heat for 7–8 minutes, stirring occasionally, until beginning to soften. Stir in the celery and carrot and cook for 3 minutes, stirring frequently. Add the garlic, cumin and coriander and cook for a further minute, stirring constantly.

Add the lentils, stock, and tomatoes with their juice, tomato purée and bay leaf.

 

Main chicken stuffed with ginger and orange

Chicken Breasts

Grated zest of an orange

Spring onion thinly sliced

Grated fresh ginger

Chopped fresh coriander

Coconut oil

Preparation method

Place chicken breasts between 2 sheets of greaseproof paper. Flatten with a rolling pin.

Spread the breast with the coconut oil and then the rest of the ingredients.

Place on cling film and roll the breast up like a swiss roll. Then wrap the cling film into a sausage shape and leave to chill for at least 30 minutes.

Remove the Clingfilm and place in a pre-heated oven and use the juice of the orange.

Then enjoy it with some Sweet Potato Mash

 

Sweet potato mash with red onion and fresh tomato

Sweet potatoes

Coconut oil

½ lemon

Fresh tomatoes

Red onion

Preparation method

Cut the sweet potatoes into big chunks and add a teaspoon of coconut oil . Toss to coat the potataoes.

Place the 1/2 lemon with the potatoes.

Cover and cook on high for approx 8 minutes in the microwave (until soft).

Once sweet potatoes are soft, remove the lemon and mash the potatoes. But don’t mash too much, it is nice for them to stay a little chunky.

Squeeze the lemon juice over the potatoes (use a glove or tongs for this. You might also want to squeeze the lemon through a mesh strainer to catch the seeds, unless you are slick enough to catch seeds falling out of a hot lemon).

Whilst the potatoes are in the microwave sweat some onion in a small amount of coconut oil and add some diced fresh tomato and herbs of your choice.

Once cooked stir all ingredients together and season to taste, I like smoked paprika but this is down to personal choice, you may prefer fresh chilli.
