Ingredients

1 red onion

1 garlic glove

ginger

1 tsp coconut oil

2-3 chicken breasts

Thai green paste

200ml Coconut milk

Baby corn

Coli flour & Broccoli

Green beans

Sugar snap peas

Bean sprouts

 

Preparation method

  1. In a pan, add a spoon full of coconut oil, gently fry your chopped onion and garlic once brown add chicken diced stir for 5 mins until chicken starts to brown then add ginger.
  2. Add in green beans, baby corn, sugar snap peas, coli four & Broccoli all copped to your size. Stir in half of jar of Thai green paste and 200ml coconut milk stir all mix together well, until the chicken is cooked. Add a bag of Bean sprouts to the pan for the last 5 mins with your choice of finely chopped chilli. (Optional)
