Ingredients
- 2 onions, chopped finely
- 150g button mushrooms, wiped and halved
- 1 red pepper, sliced
- 4 clove of garlic, crushed
- 1 red chilli, chopped
- 1 tbsp ginger powder
- 1 tbsp Himalayan rock salt
- 1 1/2 tbsp garam masla
- 6-8 medium tomatoes (blended)
- 1 tbsp turmeric
- Fresh coriander, torn
- 3 chicken thighs
- 4-6 chicken drum sticks
- 1 1/2 tbsp coconut oil
Method
- Add coconut oil to large pan
2, Once melted add onion and garlic until browned
- Stir in ginger, chillies, tomatoes, turmeric, garam masala and salt
4, Allow to simmer for 3 minutes
5, Add chicken and coat with ingredients
6, Cook on low heat for at least 3045minutes
7, Add mushrooms and peppers and cook for a further 5minutes
8, Finish with a sprinkle of torn coriander
