Ingredients

  • 2 onions, chopped finely
  • 150g button mushrooms, wiped and halved
  • 1 red pepper, sliced
  • 4 clove of garlic, crushed
  • 1 red chilli, chopped
  • 1 tbsp ginger powder
  • 1 tbsp Himalayan rock salt
  • 1 1/2 tbsp garam masla
  • 6-8 medium tomatoes (blended)
  • 1 tbsp turmeric
  • Fresh coriander, torn
  • 3 chicken thighs
  • 4-6 chicken drum sticks
  • 1 1/2 tbsp coconut oil

 Method

 

  1. Add coconut oil to large pan

    2, Once melted add onion and garlic until browned

  1. Stir in ginger, chillies, tomatoes, turmeric, garam masala and salt

   4, Allow to simmer for 3 minutes

   5, Add chicken and coat with ingredients

   6, Cook on low heat for at least 3045minutes

   7, Add mushrooms and peppers and cook for a further 5minutes

   8, Finish with a sprinkle of torn coriander
