Ingredients

3 peppers mixed colours

2 red onions

4 carrots

2 eating apple

Slat and pepper

4 cloves garlic

2 tbspn’s balsamic vinegar

700g Tinned tomatoes

 

Preparation method

Deseed the peppers, peel and half the onion, trim the carrots, Slice the apple

Heat a pan with coconut oil, fry off the garlic and onions until lightly brown then add the carrots, Peppers, Apple to the pan stir regularly

Slice the pork fillet into cubes and season with salt and pepper Cook in a hot pan, browning on all sides. Add the tomatoes and balsamic to the Veg  mix, stir well.

Then add the pork to the source for a further 10mins to let it all simmer through.

Can be serve with sweet potato mash (optional)
